Turkey Casserole

(serves 8-10)

Still finding ways to use up those Thanksgiving leftovers?  Well, this casserole is a perfect solution for transforming those stray bits of turkey into a truly comforting, easy, and delicious dinner.


4 cups cooked rice

3 cups chopped broccoli (pre-steamed if fresh, or thawed if frozen)

3 cups leftover turkey meat, medium dice

1 can (10 3/4 ounces) cream of mushroom soup

salt and freshly ground pepper

2 cups grated sharp cheddar cheese

Preheat your oven to 350.  In a large bowl, mix rice, broccoli, turkey, and cream of mushroom soup.  Mix to incorporate and season with salt and pepper. Spoon mixture into an 8 inch by 8 inch square casserole dish and top with grated cheese. Bake for 30 minutes and serve warm. Enjoy your turkey casserole!
